Pineapple Salsa

Making this salsa was very simple.
I used half of a fresh pineapple, diced (about 2 cups)
1 medium size red onion, diced
1 bunch of cilantro, chopped
Plus the juice of 1 lime.
Mix until combined.

I let it sit overnight in the fridge.   It can be eaten with tortilla chips or you can serve it with chicken or fish.  But, no matter how you eat it...it's yummy!
